Vegetable Kolhapuri

Ingredients

100 gms Paneer Small Diced
150 gms Cauliflower Florets
150 gms Carrot small Diced
100 gms French Beans Chopped
½ cup Potatoes small Diced
½ cup Green Peas
½ cup Capsicum Small Diced
1½ cup Onion finely chopped
1 cup Tomatoes finely chopped
1 cup Kolhapuri Masala Paste (Click for Recipe Here)
2 tblsp G/G/GC Paste (How to Make G/G/GC Paste Click Here)
1 tsp Haldi Powder + ½ tsp more
2 tsp Red Chilli Powder
¼ cup Oil + Oil for frying
Salt as Per Taste
Fresh Coriander Leaves for GarNICHEing

Method

Boil cauliflower, beans, peas, carrots with ½ tsp haldi powder salt as per taste until 80 % done. Strain the water and keep the veggies aside and reserve the veggies stock for further use.

In a deep frying pan heat oil and fry potatoes and paneer pieces to light golden brown and keep it aside.
Heat ¼ cup of oil in a sauce pan, add onion and sauté until translucent. Add capsicum and sauté until capsicum are soft, then add tomatoes, G/G/GC paste, haldi powder, red chilli powder and stir cook for a minute. Add kolhapuri masala paste and sauté well. Once the flavor rises add all the boiled veggies, fried paneer, potatoes, and stir slow to mix well. Add about 1 cup of veg stock and adjust the gravy as per your taste or need. Here you can adjust the salt as per your taste too. Let the veg cook for 2 to 3 minutes and serve with paratha, bhakri or chapatti. Enjoy!!
