Kolhapuri Masala Paste


Ingredients

½ cup Fresh Grated Coconut
1 tblsp Sesame Seeds
¼ cup Kaju
5 to 6 Dry Kashmiri Chilli ( Remove the Seeds)
1" Cinnamon Stick
½ tsp Cloves
½ tsp Black Pepper Corns
1 tsp Whole Coriendar Seeds (Dhania Seeds)
1½ tsp Jeera Roasted
4 to 5 Cardamoms (Green Elaichi)
1 Bay Leave (Tej Patta)
2 tbslp Oil for Roasting
Oil As per need.

Method

Heat oil in a non stick pan and add grated coconut. Stir roast it until dry and light brown in colour. Add Kaju and sesame seeds and continue roasting until the sesame seeds and kaju is roasted to light golden colour. Add all other ingredients and continue roasting for few seconds and off the heat. Let the mixture cool down to room temperature.
Once the mixture is cool, add the mixture in a blender and blend it with 1 cup of oil into a smooth paste. If required add more oil. Store it in a glass bottle for further use.

Note: You can make lots of recipes using this masala.

Tips: Using generous quantity of oil in this masala will preserve the masala for longer time.
