Chef's Notes & Tips

Chef’s Note

  • Do not increase the heat excessively while frying. If the oil is too hot, the pastry can develop bubbles or blisters and soften after cooling.

Tips & Tricks

  • Slow frying at medium-low temperature produces a more evenly coloured and crisp pastry that stays crunchy for longer.

Chef's Notes & Tips

Chef’s Note

  • For extra crunch, keep the vegetable filling slightly undercooked so it finishes cooking inside the roll as it fries.
  • Always fry spring rolls on medium-low heat; high heat browns the wrapper quickly but leaves the inside soggy.

Tips & Tricks

  • A wire rack is better than tissue for draining, as it keeps the crust crisp. Jamjo ane Jamarjo!

✨Nargisi Kebab✨

Nargis is the name of a beautiful flower. During the Mughal era, royal khansamas were creative Jadugars of the kitchen, creating Nargisi Kebabs inspired by the beauty of Nargisi eyes.

Hiding a boiled egg inside spiced minced meat, coating it with Vermicelli, frying it until crisp, and presenting it so that when cut in half, it resembles an eye and the blooming Narcissus flower. Today, we salute that creativity and recreate Nargisi Kebab in our own style.
