Sr. Weight Units Name
• 500 g Cholai bhaji / amaranth leaves, cleaned and roughly chopped
• 30 ml Oil (2–3 tbsp)
• 2.5 g Cumin seeds / jeera (½ tsp)
• 20 g Garlic, sliced lengthwise (10–12 cloves)
• 15 g Green chillies, slit lengthwise (4–5 nos)
• 300 g Onions, thinly sliced (3 medium)
• 5 g Turmeric powder (1 tsp)
• 150 g Tomato, thinly sliced (1 large)
• 5 g Salt, to taste (adjust carefully due to natural sodium in cholai)
Method / Instructions
  1. 1. Baghar & Onion Sauté: Heat oil in a kadai, add cumin seeds, sliced garlic, and slit green chillies. Sauté until fragrant, then add sliced onions and salt. Sauté until onions are soft and tender without browning.
  2. 2. Add Bhaji & Turmeric: Add drained cholai bhaji and turmeric powder. Mix well with the soft onions and cook covered for 5–7 minutes until the bhaji wilts and moisture reduces.
  3. 3. Add Tomato & Finish: Layer sliced tomatoes over the bhaji, cover, and cook for another 5–6 minutes. Give a final hearty mix to incorporate the tomatoes and evaporate excess moisture. Serve hot with ghee-wali roti! Jamjo ane Jamarjo!

Chef's Notes & Tips

Chef’s Note

  • Tender Cholai stems are completely edible and add texture to the bhaji; there's no need to discard them unless they are thick and fibrous.
  • Use minimal spices to let the natural sweetness of the onion and earthy flavor of the cholai shine through.

Tips & Tricks

  • Add salt carefully, as cholai naturally contains small amounts of naturally occurring sodium.
