Chef's Notes & Tips
Chef’s Note
- Do not overcook the dal initially. A slight bite in chana dal gives the dish its signature texture and integrity.
- Dudhi naturally releases plenty of water, so adding controlled water keeps the curry rich and perfectly balanced.
Tips & Tricks
- Removing whole chillies before final mixing keeps flavor and aroma intact without overpowering heat. Enjoy hot with ghee-laced rotis!
