Jaggery Fudge - Gol Papdi
Ingredients
300 gms Wheat
Flour
200 gms Ghee
100 gms Pure
Ghee
300 gms Jaggery
(Gol)
50 gms White
Gum Granules (Goondar)
½ tsp Elaichi
Powder
2 tblsp Chaloori
Dry Fruit Chips to
GarNICHE
Method
Soak chaloori in warm
water for 2 hours. Skin the chalori as much as possible and strain and keep it
aside. Grate jaggery and keep it aside. Take a steel or aluminum mithai tray
and grease it with oil.
Heat all the ghee in a
non stick deep kadhi. Once the ghee smokes add gum granules and fry them. Once
the granules flakes, lower the heat and immediately remove it with slotted
spatula and keep it aside.
High the heat once again
and add wheat flour. Stir the flour in one direction continuously. Keep
stirring until the flour shines and ghee is seen separated. Add in elaichi
powder, chalori, and fried gum granules and stir. Immediately add grated jaggery
and stir in one direction until thoroughly mixed. Off the heat and bring down the
kadhai.
Transfer the papdi
mixture in the greased tray and pat the papdi halwa spreading even in the tray.
GraNICHE with choice of dry fruits chips. Let the papdi halwa cool down to room
temperature.
Take a sharp dessert knife
and make your choice of pieces. Enjoy!!
