Smoked Hung Curd Chutney


Ingredients

½         cup      Roasted Peanut
1          cup      Hung Curd (How to make Hung Curd - Click Here)
½         tsp       Rai
1          tsp       Ghee
½         tsp       Crushed Black Pepper
Black Salt as per Taste
Few Curry Leaves
Charcoal for smoking

Method

Take hung curd in a bowl and make a well in the middle. Flame up charcoal to red hot. Take a foil paper and place it in the middle of the hung curd.
Heat ghee in a non stick pan and once the ghee smokes add rai and curry leaves. Once the aroma of the rai and curry leaves fill the air off the heat and remove the spices in a separate bowl and keep it aside.
Take the burning coal and puff off extra ashes over it. Place it on the foil paper and pour ghee from the pan on it. Immediately cover the hung curd bowl and put a weight on it. Keep it for 15 to 20 minutes for smoking.
Meanwhile grind peanut into a fine crumbly powder. Once the smoking is done of the curd uncover the lid and discard the coal and foil paper. Check for any coal or ash residue in the curd and discard it. Mix in ground peanut, black salt, black pepper powder, tempered rai and curry leaves and mix well.
Serve this yummy smoked hung curd chutney with any kebabs. Enjoy!!
