Vada Pav
Ingredients

For Vadas

4 Medium Potatoes Boiled
1 tblsp Oil
½ tsp Haldi Powder
1 tsp Chilli Powder
½ tsp Mustard Seeds
1 tsp Ginger Grated
1 tsp Garlic Grated
2 Green Chillies Chopped
1 sprg Curry leaves
Lemon Juice for Taste
Fresh Hara Dhania Chopped

For Besan Ghol

2 cups Besan
½ tsp Haldi Powder
½ tsp Cooking Soda

Salt as per taste

For Combination

Oil for Fry
Ladi Pav (Bread) as per vada
Condiments of your Choice

Method

Chop boiled potatoes unevenly and keep it aside. Heat oil in a frying pan and add haldi, rai, curry leaves. Once it splatters add G/G/GC, red chilli powder and saute well until the flavour fills the air. Add potatoes in it and off the heat. Add salt as per taste, chopped hara dhania, lemon juice and mix well. Keep it aside to cool down.

In a mixing bowl take batter ingredients and add little by little water and whisk the batter thoroughly so that no lumps are leftover. The batter of chickpea flour should be thick and smooth consistency.
Now come back to the potatoes and if its cool enough make medium size balls from it.
Heat oil in a deep fryer. Once the oil is heated, dip a potato ball in the besan batter coating perfectly and deep fry on medium heat until bright golden colour.

Combination

Cut a ladi pav for the sandwich and sprinkle some lasuni techa, condiment of your choice and sandwich a vada in the pav and enjoy this famous STREET FOOD.

Tips:

Layer the above potato masala on a slice bread, sprinkle some lasun chutney, sandwich it. Cut into triangle and dip into the besan batter, deep fry it until bright golden colour from both sides and enjoy famous - PAV VADA
