Bhindi Gosh

Ingredients

500 gms Mutton Pieces
250 gms Okra - Bhindi
300 gms Tomato Chopped
300 gms Onions Chopped
1 tsp Haldi
2 tsp Red Chilli Powder (Mild)
1 tsp Chilli Powder (Spicy)
2 tsp Dhania Powder
1 tsp Jeera
1 tsp Jeera Powder
1 tblsp G/G/GC Paste
4-5 nos. Green Elaichi
2 Tej Patta
1 Cinnamon Stick
3 tblsp Oil
Lemon Juice for Taste
Salt to Taste
Fresh HD/PHD chopped


Method

Wash and dry bhindi. Chop the bhindis into 2 inch long pieces. Sprinkle some oil, salt, haldi and red chilli powder and keep it aside.

Wash and drain mutton thoroughly and add G/G/GC paste, salt as per taste, 1 tblsp oil and keep it aside. Take a sauce pan and heat oil on medium high heat. Add jeera, once it crackles, add chopped onions and saute until light golden brown.

Once the onions start browning, add tej patta and rest of the masalas, except dhania powder. Saute thoroughly mixing all the masalas evenly. Add chopped tomatoes and stir well. Cover and cook the mix for 2 minutes.

Uncover the pan and add marinated mutton and mix well. Keep stirring the mutton with the mixture slowly but evenly until the mutton is 50% cooked in the masala. Add 2 to 3 cups of water, cleaning the sides of the pan and stirring the stew. Simmer the heat and let the mutton cook up to 90% uncovered or half covered.

Once the mutton is cooked, add the seasoned bhindi and stir lightly to mix well in the mutton. Cover the mutton and let it cook for another 10 minutes or until bhindi is done.

Stir in dhania powder, some lemon juice, adjust salt as per taste and...

GarNICHE with Freshly Chopped Hara Dhania/Phudina and enjoy with Jeera Rice or Paratha.
