Cheese & Green Chutney Chicken
Ingredients:
500 gms Boneless Chicken Breast1½ cup Green Chutney
1½ cup Grated Cheese
1 cup Bread Crumbs
1 cup Flour (Maida)
½ cup Lemon Juice
3 Eggs
Oil for Frying
Seasoning for Taste
Lettuce Leaves
Lemon Juice
Choice of Sauce
Method
The green chutney in this recipes should be spicy and flavoured with garlic, jeera with tampering of curry leaves and mustard seeds. You can use normal chutney or coconut based or a peanut green chutney too.
Cut open each chicken breast like a flat wing into 2 halves from the palm top side of the breast taking care not to separate it. Take a plastic sheet and pound gently between the layers of plastic to flatten evenly. Once these breast are flat like a sheet, season it salt, pepper, lemon juice and keep it aside.
Spread the green chutney evenly and grate cheese over it. Roll the chicken breast and seal it with tooth picks. In a large bowl beat eggs and add flour and seasoning and make a medium creamy batter. Dip each stuff chicken breast in this batter and roll it into bread crumbs. Shallow fry these breast until brown and crispy.
