Idli Medley
Ingredients
6 to 8 nos Big Idlis (if using small use double the quantity)
½ cup Chopped Cooked Mushrooms (Optional)
½ cup Grated Carrots
½ cup French Beans Chopped thinly diagonally
½ cup Frozen Green Peas
1 no Green chilli finely chopped
1 tsp Jeera Powder
½ tsp Haldi
1 tsp Red Chilli Powder
Chat Masala Powder as per taste.
Salt As Per Taste
Oil for Deep Frying
Fresh Coriander Leaves.
Method
Step 1
Boil carrots, green peas, french beans until soft and strain in a colander.
Remove in a shallow dish and spread it to cool. Keep it aside.
Step 2
Once the veggies are cooled, add all the dry masala, green chilli, salt as per taste, mash it with a hand masher or a pav bhaji masher. Mash idlis in it, fresh coriander and mix well.
If the mixture is too dry sprinkle the boiled veggies stock to make it wet.
Step 3
Prepare oil for shallow frying. Do not use much oil, just enough for roasting.
Make medium round balls of the idli mix and flatten it to make a round cutlet shape.
Step 4
Once all the cutlets are done.
Roast fry evenly from both sides until light crispy brown. Enjoy!!
