Cheezy Rice Koftas
Ingredients:
2 cup Leftover Cooked Rice2 cups Grated Fresh Coconut
½ cups Grated Cheese
8 small cubes of mozzarella Cheese
3 nos. Eggs
1 tsp kasturi Methi
1 tblsp Minced Garlic
½ tsp Chopped Green Chillies
2 cups Bread Crumbs
Salt and pepper to Taste
Oil for Frying
Method
Heat oil for frying.
Meanwhile combine the rice, grated cheese & coconut, dry methi, garlic, green chillies, 1 egg and seasoning as per taste in a bowl and thoroughly combine the mixture.
Take a spoonful of the mixture in your palm and pat it like a flat cutlet. Take a cube of mozzarella and place it in the centre, and stuff the pattie making round balls. Repeat this process to the rest of the mixture.
Whisk the remaining 2 eggs in a bowl. Dip each stuff Cheezy Rice Koftas in the eggs and then in the breadcrumbs, shaking off any excess.
Once the oil is ready for frying, carefully fry the koftas until golden brown and cooked throughout.
GarNICHE with Tomato Ketchup and serve.
Tips & Notes:
You can mix boil shredded chicken or Boiled Veg with mixture and make your own style of Rice Koftas.
