Sol Kadhi - A Spicy Kokan Drink

Ingredients

2 gls Fresh Coconut Milk
4 pcs Kokam (Soaked in warm water)
3 pods Garlic
½ Green Chilli
½ tsp Rock Salt
Few Fresh Coriander Leaves

Method

Crush garlic, green chilli and salt in a mortar and pestle into a smooth paste. Squeeze out the kokam from the water and blend it with coconut milk. Once blended, sieve the drink in a pitcher. Stir in the chilli garlic paste and mix thoroughly. Chill the drink an hour before serving (Optional). Pour in a tall or thick glass, garnish with fresh coriander leaves and Enjoy!!

Tips & Notes:

The creamier the coconut milk, the more flavorful it will be.
Spice up this drink according to your taste.

How to make fresh coconut milk?

Grated fresh coconut in a large bowl. Add luke warm water and squeeze the grated coconut as strongly as you can. Sieve the squeezed milk into another bowl pressing the grated coconut, removing as much milk as you can. Use the sieved milk as per the recipe and use the left over grated coconut for curries and rice.

Tips & Trick:

Use less water to make the milk more creamier.
Blend the grated coconut in a juice blender with little warm water will give you thick coconut cream. Sieve the blended coconut cream and enjoy the fresh coconut cream.
