Spanish Omelet

Ingredients

1 no Large Potato (Peeled, Chopped in small dice).
1 no Large Onion Finely Chopped
1 no Red Bell Pepper (Red Capsicum) finely chopped
3 no Eggs
Oil as per need
Salt and Black Pepper for taste.

Method

Whisk eggs in a bowl with salt and pepper as per taste. Keep it aside.
In a non stick frying pan heat around 1 cup oil.
Add onions and potato and stir cook until potatoes are half done.
Add bell peppers and stir mix well cooking potatoes until soft.
Once cooked, drain oil from the frying pan and remove the potato mix in the bowl of whisked eggs.

Adjust salt and pepper as per taste and mix thoroughly.
Heat the same oily pan on a medium high heat and pour in the egg and potato mixture in the pan.

Pat it evenly to spread the mixture, from the middle and from the edges.
Lift lightly the edge and see if the side is cooked.
If it’s done, take a plate as big as the pan and turn it upside down over the pan.
Hold the plate carefully and topsy-turvy the pan.
Put back the pan on heat and slide the omelet back in the pan.
Cook it similarly, until done and remove it on a serving plate. Cut a piece of omelet as a cake slice and serve individually, topped with choice of sauce or cream. Enjoy!!

Tips: Have this omelet directly, you shall enjoy the flavors of potato, onions and bell pepper.
