Ingredients
300 gms Boneless Chicken2 tblsp Unsalted Roasted Peanuts
8 to 12 Dried Red Chilies
2 tblsp Minced Ginger
2 tblsp Minced Garlic
1 cup Green Onion Chopped
1 tblsp Oil
Marination Sauce
¼ cup Soy Sauce1 tblsp Tabasco Sauce
2 tsp Brown Vinegar
½ cup Chicken Stock
2 tsp Sugar
2 tsp Cornflour
Others
Oil as per needSalt as per Taste
Method
Split dry red chillies length wise and remove the seeds. Chop few red chillies as small as you can and keep few whole chillies aside.
Cut boneless chicken into pop corn size. In a large bowl add the chicken and all the marination sauce, salt as per taste, mix well and keep it aside.
Place a chinese wok on high heat. Heat oil. Once the oil smokes remove the wok from the heat and add in, chopped red chillies, peanuts, garlic, ginger, green onions and saute it rapidly. Remove in a bowl and keep it aside.
Heat the same wok again with 2 tblsp oil. Add in whole dry chillies, marinated pop corn chicken and saute it until chicken is 60% cooked. Add in peanut Sichuan sauce in it and stir cook well until done.
GarNICHE on top of fried noodles with finely sliced green onions. Enjoy!

ReplyDeleteTabasco sauce can be replaced by any hot (Tikkha) sauce available. Chicken stock can be replace by simple water or veg stock or rice water.
