Pan Cakes (Puffed Malpuas)

Ingredients

250 gms Maida
2 tblsp Melted Butter
1¼ cup Milk
2 tblsp Powdered Sugar
1/2 tsp Baking powder
2 to 3 Drops of Vanilla Essence
Salt
Some more butter for frying.
Honey or Chocolate sauce for GarNICHE

Method

Step 1

Seive maida with a wire mesh in a bowl so that no lumps are formed.
Add butter, milk, a pinch of salt, baking powder, powdered sugar, vanilla essence, little water and whisk well with a whisker. Mix it to a smooth thick cream, no lumps should formed.

Step 2

Heat a non stick fry pan on medium low heat.
Brush a tsp of butter.
Pour 1½ large spoon full of batter in centre of the pan and spread it make a thick round pan cake.
Pour a tsp of butter round the edges of the cake. Let it cook for a minute.
Bubbles will start spouting, that means its perfect.
With a flat long spatula pick the edge of the cake and check if its light brown.
Carefully lift the cake and turn it to cook it on other side similarly for another minute.
Check it, and if its done, serve it with Honey, Malai or Chocolate sauce. Enjoy!!

Note: Non vegetarians can add 2 eggs in the mixture in step one, than do not use baking.
