Ingredients
1 Whole Chicken with Skin (1200 gm approx)50 gms Butter
1 tblsp Olive Oil
2 Nos Medium Size Lemon
1 tsp Mix Spice Powder
2 tsp Mix Dry Herbs
Crush Black Pepper to Taste
Salt as per Taste
For Stuffing
Baby PoatoesBaby Carrots
Fresh Hearbs
Lemon Slices
Method
Pre-heat the oven 240°C.
Wash and clean the chicken thoroughly. Squeeze pat dry with kitchen paper towel. Keep it aside.
Wash veggies and keep it aside.
Squeeze out lemon juice in a bowl. Melt butter with olive oil and add in with lemon juice. Add all the seasoning and mix well.
Drizzle the lemon and butter mixture over the whole chicken and rub it thoroughly. Rub generously the marination inside the skin of the chicken as much as possible.
Stuff baby potatoes with skin, baby carrots, cut lemon in slice and fresh hearbs in belly of the chicken. Hold the end of the chicken leg as close to the belly and tie it with a thick strong thread.
Pour in any left over marination over and inside of the chicken and keep it aside until the oven is heated. Once the oven is heated place the chicken in the oven and reduce the temperature to 200°C and let it roast for above 1 hour.
After an hour reduce the temperature to 160°C and let it roast to another 30 minutes.
Prepare a serving dish with green and salads. Remove the chicken from the oven and place i on the salad dish. Serve and Enjoy!!
Tips and Tricks
If you want more crispy roasted chicken marinate the chicken with salt a night before roasting.Note:
Dry herb can be anything from oregano, rose merry, thyme, basil, fenugreek leaves, mint leaves and more.Mix spices can be mix whole garam masalas of your choice with chilli powder, dhania powder etc.
