Instant Rice Uttappa
Ingredients
2 cups Cooked Rice¾ cup Besan
¼ tsp Haldi Powder
½ tsp Red Chili Powder
¼ cup curds (dahi)
1 no. Onion Finely Chopped
2 no Green Chilies Chopped
Fresh Coriander Leaves finely Chopped
Salt as per taste
Oil for Greasing the pan
Method
In a blender jar add rice, curd, besan and all the dry powder masala and blend well. The consistency of the batter should be medium thick. If needed add ¼ cup water.Remove the batter in a large bowl and add in chopped onions, green chilies, coriander, salt as per taste and mix well.
Heat a non stick fry pan and drizzle some oil. Take big spoon full of uttappa mix and pour in the center of the pan. Spread evenly to a size of puri and roast the uttappa on a medium heat. Drizzle tsp of oil around the edges of the uttappa to cook well. Take a flat spatula and turn the uttappa and cook similarly to crispy golden brown. Enjoy with choice of chutney.
