Crispy Pancakes
Ingredients
1 cup Cauliflower Florets1 cup Potato Cubes
1 cup Grated Carrots
1 cup Chopped Green Onions Leaves only
1 cup Thinly Slice Cabbage
1 cup Grated Mozzarella
2 no. Egg (Optional)
1 tsp Jeera Powder
½ tsp Chilli Powder
¼ tsp Haldi
Olive Oil as per need
Salt as per Taste
Fresh Chopped Herbs
Method
Steam cauliflower florets and potatoes in a steamer or in a small colander until soft and mashy. (Do not boil it) After Steaming keep it aside to cool.Take a large bowl and mash steamed veggies together and add in all the grated ingredients, cabbage, green onions leaves, cheese, egg, dry masalas, fresh herbs, seasoning and mix well.
Heat 1 tsp oil in a non stick frying pan. Take heap spoonful of the mixture, spread it in the pan as thick or thin you want and fry on a medium high flame until lightly crispy from the bottom sides.
Turn the cake topsy turvy and fry from other side too until golden brown. Have this Crunchy Brunch with Fruit Yogurt. It will make your day.
