Almond Soup

Ingredients

225 gms Blanched Almonds
5 cups Chicken Stock
2 tblsp Butter
2 tbslp Maida
1/2 cup Fresh Cream
Salt and Black Pepper to Taste

Method

Blend almonds into fine smooth paste. Set aside.
In a heavy bottom sauce pan heat butter on a medium heat and add maida. Whisk vigorously to make a thick paste. In a slow stream add chicken stock and keep whisking continuously until the maida is blended thoroughly.
Bring the soup to boil. Once boiling, remove from flame and strain the soup through a sieve into a clean sauce pan and bring it back to simmer. Add almond paste, and whisk the soup well so that no lumps are formed. Add in the cream, and season with salt and pepper. Serve it with cheese croutons. Enjoy!!
