Maxican Scramble Eggs (without oil)

Ingredients

2          no        Eggs
½         no        Red Bell Pepper Small Cubed
½         no        Onion Finely Chopped
1          cup      Tomatoes De-Seeded and small cubed
1          no        Green Chilli
Salt and Pepper to Taste

Method

Heat ½ cup of water with pinch of salt in a non stick frying pan.
Once the water boils add in the chopped veggies and cook until the water is absorbed.
Meanwhile whisk the eggs adding salt and pepper as per taste until fluffy.
As the water is reduced and veggies are cooked add the whisk egg and lightly mix the veggies and scramble the eggs thoroughly. Serve immediately on bread toast. Enjoy!! 
Note: You can use your choice of veggies.
