Gosht Leftiko

Ingredients

500 gms Mutton Shanks
4 Large Tomatoes Slices
2 Large Onions Sliced
1 tblsp Minced Garlic
250 ml Black Grape Juice
1 tblsp Honey
1 cup Olive Oil
1 tsp Dry Oregano
1 tsp Jeera Powder
1 cup Carrots Chopped
Stock as Per Need
Salt and Pepper to Taste

Method

Mix altogether the ingredients except for the meat and vegetables. Adjust seasoning as per taste and keep it aside.
Take a oven proof dish and layer some onions, tomatoes and carrots. Top the layer with mutton shanks. Pour the marination over the meat, so that every pieces is coated.
Once again layer the veggies and cover it with thick foil paper. Pour some stock to cover the meat.
Cook in an oven or under a grill at 250°C for 10 minutes and then at 130°C for another 1.5 hours.

GarNICHE the lamb shanks with Italian salad and..

Serve with lemon, fried potato wedges or creamy risotto.
