Method
Step 1: Prepare the Cream Mixture
-
In a heavy-bottom saucepan, combine butter, cream, and sugar.
-
Heat gently over medium-low heat until it just begins to boil. Remove from heat and keep aside.
Step 2: Melt the Chocolate
-
Using a double boiler, melt the chopped chocolate until smooth and glossy.
-
Add the warm cream mixture to the melted chocolate gradually, stirring continuously to blend.
-
Add the fruit flavor essence and stir well until the fondue is silky and fully incorporated.
Step 3: Serve
-
Pour the finished fondue into a fondue pot or a heatproof serving bowl placed over a small tea light.
-
Serve warm with assorted fresh fruits, cake cubes, or other bite-sized treats.
Chef’s Notes
-
Keep the fondue warm over a tea light or small burner to maintain consistency.
-
Add a splash of liqueur like Grand Marnier or Kahlúa for an adult version.
-
For a darker, less sweet fondue, use bittersweet chocolate and reduce the sugar.
-
Fondue fountains are ideal for parties, keeping the chocolate warm and flowing continuously.
