Boil Egg Stuff Bhurji

Ingredients

6 nos Hard Boiled Eggs
2 nos Medium Tomatoes chopped
1 no Onion Finely Chopped
1 no Green Chilly Finely Chopped
2 tblsp Ghee
1 tsp Chaat Masala
½ tsp Chilli Powder
½ tsp Haldi Powder
1 tsp G/G Paste
Salt and Pepper as per Taste
Fresh Coriander leaves for GarNICHE

Method

Peel and cut the eggs into half.
Remove the yellow and keep the white separate.
Heat ghee in a kadhai and sauté onions until soft.
Add G/G paste and green chilli, tomatoes, all the dry masalas.
Cook it for about 3 minutes or until it dry.
Add yellow egg yolks and mash  and mix it thoroughly.
Add salt and pepper as per taste and remove from flame.
The egg white and stuff the yellow masala, place it on a serving plate.
GarNICHE with fresh coriander and serve. Enjoy!!
