Tropical Prawn Curry


Ingredients

600 gms Cleaned Raw Tiger Prawns
3 stk Lemon Grass chopped
5 no Red Chilli Chopped
1 no Onion Paste
1 tblsp Tomato Paste
1 tsp Red Chilli Paste
2 tsp Turmeric Powder
1 Fresh Bay Leaf
1½ cup Coconut Cream
2 tbsp Vegetable Oil
½ cup Pineapple Juice
1 cup Pineapple Chunks
Fresh Coriander Leaves
Salt, to taste

Method

Heat a heavy bottom sauce pan and add oil. As the oil heats up add bay leaf, onion paste and saute until onion is lighly brown.
Add tomato paste, haldi powder, salt as per taste and sitr.
Add pinapple juice, chunks and prawns together and mix well. Cover and let the prawns cook for 10 minutes.

After 10 minutes uncover the prawns and add chilli paste, lemon grass and stir to mix well. Add coconut cream, ½ cup of water, adjust the seasoning an let it cook for another 3 to 4 minutes.

Serve on Steam rice or with Parathas
