Spaghetti - Aglio e Olio

Ingredients

200 gms Spaghetti
2 tblsp Minced Garlic
tblsp Red Chilli Flakes
2 tblsp Olive Oil
Freshly Crushed Black Pepper
Salt per Taste
Grated Parmesan Cheese
Parsley
Cherry Tomatoes

NOTE:- The measurements in this recipe can vary depending on your taste.



Method

Cook spaghetti according to the packet directions.
Usually in a large sauce pot fill half water and boil it. Once the water starts boiling, add spaghetti (do not break the spaghetti).
The whole bunch of spaghetti may not go inside the sauce pot, no problem, dip as much as it can and as it softens keep pushing the rest inside until all the spaghetti is submerged in hot water.
Adjust the quantity of boiling water accordingly.
Check one string of spaghetti, if it’s soft, strain it in a colander. Do not rinse it in cold water like any other noodles.
Transfer this hot spaghetti in a large bowl.
Take a frying paan, add 1 tblsp Olive oil and heat it. Once the oil smokes add garlic and saute for a minute or so until it flavours. Immediately, pour this garlic oil on the spaghetti in the bowl.
Add chilli flakes, black pepper, salt as per taste, once more some more olive oil and toss this spaghetti with two forks to mix well.

Take a serving plate and carefully pick up the spaghetti and place it on the serving plate.

GarNICHE with Grated Parmesan Cheese, Chopped Parsley, Cherry Tomatoes and serve hot.
