Palak Bateta in White Sauce
Ingredients
1 Bunch Palak (The bunch depends, so use as per your requirement)
1 Large Potato
1 tblsp Minced Garlic
1 tsp Jeera

2 tblsp Oil
Grated Cheese if you prefer
Salt asp per Taste

Method
Clean,
wash and chop spinach coarsely. Blanch spinach in salt water, until
lightly soft but not cooked completely. Strain the leaves in a colander
and rinse with cold water so that the palak stops cooking.
Boil potato until 90% done, do not over boil it. Peel the skin and keep it aside in cold water until it stops cooking further.
Once the potato is cooled dice it into small pieces. Keep it aside.
Heat
oil in a non stick kadhai. Add jeera, garlic and saute until flavours.
Add diced potatoes and toss it well for a minute. Add in white sauce and
little water to lighten the sauce. Cook for a minute and mix in
spinach. Cook for another minute more.
Its Done, serve it with garma garam phulkas or roti GarNICHED with grated cheese. Enjoy!!
