Mutton Rogan Josh

Ingredients

500 gms Mutton
4 tblsp Ghee/Butter
4 tblsp Sauf Powder
2 tblsp Ginger Powder
1 tblsp Garlic Paste
tblsp Kashmir Chilly Powder
1 tblsp Saffron Soaked
2 tblsp Sour Yogurt
1 tsp Haldi Powder
1 tsp Jeera
6 Nos. Green Elaichi
4 Nos. Black Elaichi
4 Pcs Cinnamon Sticks (small)
Salt to Taste

Method

Take a skillet and roast jeera, elaichi, black elaichi and cinnamon sticks. Grind these spices in fine powder and keep it aside.
Heat ghee in a sauce pan and add mutton into it. Add grinded powder, sauf powder, ginger powder, garlic paste, kashmiri chilly powder, haldi powder and mix well. Cook mutton for 10 minutes stirring occasionally. At this add 2 to 3 cups of water and pressure cook mutton until soft and 90 % tender.
Open the pressure cooker lid carefully and stir once the mutton to normalize the heat. Add yogurt, Kesar, and stir it once or twice and cover the lid and let it cook for another 5 minute on slow heat so that the ghee starts floating on top.

Note:

You can add onion paste or fried onion paste with tomato puree to give a thick gravy. 

GarNICHE with Fresh Phudina, Lemon Slices, Ginger Julienne and Serve.
