Szechuan Sauce

Ingredients

1 cup Minced Garlic
1 cup Minced Onion
1/2 cup Minced Ginger
1 cup Minced Tomatoes
1/4 cup Mince Green Chilli (optional)
1/2 cup Tomato Ketchup
1/4 cup Soy Sauce
1/2 cup Vinegar
1/2 cup Fresh Red Chilli Paste
1 tblsp Dry Red Chilli Paste
2 tblsp Sugar
2 cups Oil
Salt as per taste

Method

Heat oil in a wok. Add onion, garlic, ginger, green chillies, both red chilli paste and sauté until onion and garlic is completely soft. Add rest of the ingredients and stir well. Simmer and let the sauce cook for another 5 minutes or until the oil floats. More the oil in the sauce more days you can use it. Enjoy!!.

Note:

Break Dry Red chillis and remove seeds if you do not want too hot chilli paste. Soak the dry chillis in warm water for about 2 hours and blend it with same water in fine smooth paste.
