Sweet & Sour Baby Onions

Ingredients

350        gms            Baby Onions Peeled
1            no               Beetroot Peeled and sliced
2            tblsps          Olive Oil
1            tblsp           Brown Sugar
4            tblsps          Apple Cider Vinegar
1            Lemon Zest (Grate thinly Lemon Skin = Zest of Lemon)
2            Fresh Bay Leaves Crushed
Salt & Pepper for Taste.

Method

Boil beetroot in 2 cups of water. Once, the beetroot are boiled, strain the beetroot and soak the onions in the same water and keep it aside
Heat the oil in a large frying pan over medium-high heat. Add the onions and bay leaves to the pan, and cook for 5–6 minutes until golden brown all over. Add lemon zest, sugar, and cook for 2–3 minutes, stirring occasionally, until the onions are lightly caramelized.
Add the vinegar and continue to cook for 3 to 5 minutes until the onions are tender.

Transfer to a dish, and serve any barbecue recipe. Enjoy!!
