Sabut Danna Stuff Croquettes
Ingredients
1 cup Sabudanna
2 cup Mash Potato
2 tblsp Peanuts
1½ tsp Red Chilli Powder
½ tsp Cumin Powder
1 tsp Mustard Seeds
1 sprg Curry Leaves
Grated Cheese as per need
Chaat Masala as per Taste
Salt & Pepper as per Taste
Chopped Coriander leaves

For Batter
½ cup Butter Milk
½ tblsp Maida
1 cup Poha
Oil - For Deep Frying
½ tblsp Maida
1 cup Poha
Oil - For Deep Frying
For GarNICHE:
Fresh Tomato Sauce or Green Chutney
Method
Wash and soak sabut dana and drain of the water. Keep it aside for about 2 hours. Keep sprinkling little water to moisten the sabut dana.
Take mash potato in a large bowl. Heat 1 tblsp oil in a tempering pan. Add rai, curry leaves and temper it on mash potato. Add in all the other dry masalas, peanuts, sabut danna, freshly chopped coriander and mix well.
Make a soft dough and divide the mixture a little bigger then golf ball size shapes. Take one ball in your palm and flat it like a cutlet. Place small portion of grated cheese in middle and seal it perfectly once again like a ball.
In a bowl whisk butter milk and maida and make a medium thick batter. Keep it aside. In a flat plate crush poha into crumbs and keep aside.
Take one sabut danna stuff cheese ball and dip it in the batter and roll it in the crushed poha. Deep fry it in hot oil until they are golden brown in color and drain on absorbent kitchen paper.
Serve hot with green chutney or Tomato Sauce. Enjoy!!
Tips & Notes
You can stuff boiled eggs or any other veggies.
Want to make just simple sabut danna vadas, avoid stuffing part and dipping in batter part. Make balls and flatten it in your palms and deep fry it directly. Enjoy!!
