Palak Paneer

Ingredients

300 gms Paneer Sq Pieced (How to make Basic home made Paneer Click Here)
1 Bunch Palak (Spinach)
½ cup Tomatoes Diced
1 cup Onions Paste
¼ cup Kaju Paste
1 tsp Ginger Paste
2 tsp Garlic Paste
1 tsp Green Chilli Paste
½ tsp Garam Masala
½ tsp Chat Masala
1 tsp Jeera Powder
1 tsp Red Chilli Powder
½ tsp Haldi Powder
½ tsp Mustard Seeds
1 tsp Kasturi Methi
½ cup Hara Dhania
½ cup Phudina
1 Lemon Juice
few Curry Leaves
Oil as per need
Salt-to taste

Method

Cut paneer in square pieces and fry them into golden brown and soak it in water. Keep it aside.
Wash palak thoroughly and blanch it until soft. Mix it with hara dhania and phudina. Add ginger/garlic/green chilli paste into this mixture and blend it into smooth paste.


How to blanch Palak

(boil water and once water start boiling add spinach in it, let it boil for 3 to 5 minutes, remove from heat, drain the water and keep the palak covered for few more minutes, then use as per your recipe)

In a sauce pan heat 3 tblsp oil and add mustard seeds and curry leaves. As soon as it splutters add onion paste and saute for 1 or 2 minutes or until light brown in colour. Now add kaju paste and keep strring until the onion paste and kaju paste has mixed thoroughly and leaves oil by its sides.

Simmer the heat and add all the dry powder masala. Add palak paste and stir slowly to blend all the ingredients into a fine smooth curry. Add tomatoes and season with salt and pepper according to the taste. Cover the pan and let the curry cook for another 3 to 5 minutes.

Uncover the lid, stir in the fried paneer pieces, add lemon juice and adjust the seasoning.

GarNICHE with fresh cream and serve with Phulkas.

Note: Before making large quantity make small quantity of this recipe, taste it yourself, then make large quantity for family serving. Many of them do not like palak paneer overall because of its dark green colour.
