Mutton Do Pyaaza

Oil conscious? This dish is no no for you’ll. Of course if you wish to break the rules once.

Ingredients

Do Pyaaza Gravy
500 gms Mutton
500 gms Onions
125 gms Oil
Salt as per taste

Masalas

2 tsp Jeera Powder
2 tsp Chilli Powder Bright Red
2 tsp Coriander Powder
1 tsp Haldi Powder
½ tsp Black Pepper Corns
2 Tej Patta
1½ tsp Garam Masala Powder

For Tempering

1 Large Onion
2 Green Chillies
1 tsp Ghee

For GarNICHEing

Fresh Phudina
Lemon Juice

Method

Peel onions and cut it into fours. If large onion cut it into six pieces from top. 
In a non stick sauce pan add mutton and onions together. Add all the masalas along with oil, salt as per taste, ½ cup of water and mix well.

Cover the pan and cook this mutton for 15 - 20 minutes on medium high heat. After 20 minutes, uncover the pan and stir the mutton thoroughly. The onion will be translucent at this stage.

Cover the pan again and let the mutton cook for another 15 - 20 minutes. Uncover the pan and stir thoroughly the mutton again, by now the onion will be melted in the mutton. Cover the pan and let the mutton cook for another 10 minutes more.

Uncover and check a piece of mutton if its cooked to perfection. There will be a thick onion sautéed gravy coated to mutton with dripping oil. This is Mutton do pyaaza done to perfection.

In a kadhai heat ghee. Meanwhile peel the onion and cut it into fours and peel off the petals separately. Add green chilli in the kadhai, fry it for a minute. Add onion petals and stir roast it until onion is translucent and soft.

GarNICHE Onion petals and green chillies along with sprinkles of lemon juice. Enjoy!

Note:

You can pressure cook this recipe, but the flavours will not blend as it has to. So avoid.
