Mayonnaise
INGREDIENTS
2 nos. Eggs
1 no Lemon Juice
½ tsp Black Pepper Crushed
½ tsp Yellow Mustard Seeds
½ tsp Salt
250 ml Oil

METHOD
For this recipe us a medium speed blender which has a whisk attachment and the lid with opening. Also note that the blender should be able to work on continuous speed. If your blender heats up in between of continuous blending please avoid using it.
Mix all the ingredients except oil in the blender and give a whip to mix. Once its mix well add 2 tablespoon oil.
On the blender at medium speed, cover the lid and only open the small opening on the lid and start blending.
While the blending is running add oil slowly and in a thin stream from the opening of the lid. The stream should be like a thin thread dropping in the egg mixture.
Do not stop the stream of oil until the mayo seems thick in consistency. Once the mayo is thick, taste it and if you like to adjust salt, lime or mustard, you can adjust at this stage accordingly. Blend for few seconds more after adjustment and remove in a bowl and refrigerate it for 3 to 4 hours before use. Enjoy!!
