Mash Potato Croqutte with Cream Cheese
INGREDIENTS
2 cup Mashed Potatoes
1 cup Grated Carrots
1 cup Grated Cheese
Salt and Pepper to taste
Coriander Leaves for flavor
All purpose flour (Maida) as per need
Butter or Oil for frying
For Cream Cheese
½ Mayonnaises
½ cup Whipped Fresh Cream (You can substitute it with Creamy Yogurt)
½ cup Cream Cheese.
METHOD
In a bowl whip all cream cheese ingredients and keep it in the refrigerator until you make the mashed potatoes cakes.
In another bowl, mix mash potatoes with all other ingredients and make thick round flat patties. Roll these patties on flour and line up aside on a tray. Heat a shallow pan and drizzle some oil. Shallow fry these patties turning around from both sides to crispy golden brown.
Before serving, scope a spoon of cream cheese on the patty and serve to kids, they will enjoy having these cakes. The combination of chilled cream and hot patty make these simple snack very tasty.
