Coconut Rice

Ingredients

1 cup Medium Grain Rice
1 cup Fresh Grated Coconut
2 tsp Udad Dal
2 tsp Chana Dal
1 tsp Rai (Black)
4 Kashmiri Dry Chillies
1 no Onion Sliced
1 stm Curry Patta
1 tblsp Kaju
1 tblsp Pure Ghee
Salt to Taste

Method

Wash and soak rice for 30 minutes before preparation. Soak dal separately too. After 30 minutes boil rice until 80% cooked, strain its starch water and keep it aside to cool.

In a wok or kadhai, add ghee and heat it until it smokes. Simmer the heat and temper curry leaves, mustard seeds, kashmiri chillies, dals, (strain) onions and saute until onions are translucent. Add kaju and fry till kaju turn lightly brown.

Now add grated coconut, sauté for few seconds, add cooked rice, season with salt as per taste and toss to mix well. GarNICHE with fresh phudina, hara dhania and serve with Fish Curry or Mutton Curry or your choice of Dal. Usaually this rice goes best with Fish Curry.
