Cheese Burst Paratha

Ingredients

9    balls    Chapatti Dough
Butter for Brushing
Oil for frying

Paratha Stuffing

¼    cup    Grated Carrots
1½    cup    Mashed Potato
¼    cup    Onion Finely Chopped
¼    cup    Capsicum Minced
1½    tblsp    Green Chutney
6    tblsp    Mayonnaise
Salt and Pepper Powder to taste

For Cream Cheese   

¼    cup    Fresh Cream
¼    cup    Cheddar Cheese
1    cup    Mozzarella Cheese
Method
In a small milk pan warm fresh cream, but do not boil. Remove from heat and add in both the cheese and mix well. Keep it aside to cool.

In a large bowl mix in all the paratha stuffing ingredients and keep it aside.

Roll all the dough balls to 6” to 7” chapattis.Place a single rolled chapatti on a working board and layer thinly the paratha stuffing all over the chapatti leaving ½ cm space for sealing. Brush some water on the edges of the chapatti.

Take another rolled chapatti and place it over the stuffing, covering the bottom chapatti and sealing it from the edges. Now spread the cream cheese in a thin layer all over the top of the chapatti. You can be generous of cheese if you like cheesier. Brush again the edges with water.

Cover this cheese layer with another chapatti and finally seal it. Without any pressure perfect the paratha tapping and rolling it evenly all over. Make sure the seal is not open from any sides.

Heat a non stick shallow frying pan. Add 1 or 2 tblsp ol or butter and fry this stuff cheese burst paratha evenly brown and crispy from both the side.

Serve this Cheese Burst Paratha with Coleslaw Salad or even with hot chutney. Enjoy!!
