Akuri Stuff Paratha
INGREDIENTS
4 Nos Eggs Whisked2 Nos Large Onion Chopped
2 Nos. Green Chilies Chopped
½ tblsp Freshly Grated Ginger
1 tsp Saffron Soaked
1 tsp Jeera Powder
½ tblsp Haldi Powder
2 tblsp Ghee
½ cup Hara Dhania Chopped
½ cup Grated Cheese
Salt to taste
4 Nos. Wheat Dough to make chapatties
METHOD
Take the wheat dough and make 7 to 8 inches round chapatties. The chapattis should not be too thick nor too thin. Keep it aside.Take a frying pan and heat ghee. Add onions and fry until translucent. Add green chillies, ginger, and all the dry powder masala, salt along with soaked saffron. Stir in whisked eggs and mix well. Your Akuri is ready. Remove from heat and keep it aside.
Take a chapatti and place akuri in the centre and spread evenly leaving 1 to 2 cm space on the edges of the chapatti. GarNICHE with grated cheese and herbs over the akuri. Brush some water around the chapatti edges. Top another chapatti over it and seal the edges tightly. Trim the edges by a knife or a ring cutter to give a perfect shape.
Fry the stuff paratha on a non stick pan from both sides, crispy golden brown using ghee, butter or oil. Cut the parathas and serve with Green Chutney or Sauce.
