Italian Dressing Chicken in Foil
Ingredients
4 Aluminum Foil Sheets, Large Enough To Wrap Around One Chicken Breast.4 Boneless Chicken Breast Halves
4 tsp Olive Oil
1 Onion Thinly Sliced
1 Red Bell Pepper, Julienned
4 Small Carrots, Julienned
4 Large Basil Leaves
Salt & Pepper for Seasoning
Ingredients for Dressing
1½ Cup Palm Vinegar2½ Cups Extra Virgin Olive Oil
½ tblsp Celery Chopped
1½ tblsp Garlic Thick Paste
1½ tblsp Onion Thick Paste
1 tblsp Brown Sugar
2 tblsp Water
1 tblsp Dried Oregano
½ tsp Black Pepper Powder
¼ tsp Dried Thyme
½ tsp Dried Basil
½ tsp Dried Parsley
Fresh Herbs Chopped
Salt to Taste
Method
Preheat oven to 220° C.Place one part of chicken breast on each sheet of foil. Drizzle a teaspoon of olive oil over each chicken breast. Season chicken with salt and fresh ground pepper. Arrange slices of onion, peppers, and carrots on top and around each chicken breast. Place a basil leaf on top of each chicken and vegetables.
In a bowl whisk together all the ingredients of dressing until perfectly blended. Spoon 1 tblsp of salad dressing over one part of chicken and vegetables.
