Banana Pancakes

Ingredients

2 Nos. Eggs
4 Nos. Large Bananas
1 cup Flour
½ cup Sugar
½ tsp Cinnamon Powder
½ tsp Vanilla Extract
½ tsp Baking Powder
Ghee for Frying
Salt to taste

Method

In a deep mixing bowl, peel and chop bananas. Add eggs, flour, cinnamon powder, vanilla extract, sugar, salt and blend it well with a hand blender into a smooth fine batter.
Take a non stick fry pan, add ghee and heat it. Take a large serving spoon full batter and pour it in the centre of the pan and lightly turn and tumble the pan to give a nice round shape to the cake. Fry the cake on a medium heat from both side of the cake, add ing tsp ghee if required. Once light brown and fluffy, remove on a platter.
GarNICHE with sliced bananas, caramel sauce, and fresh cream, serve. Enjoy your Breakfast.

Note: You can add your choice of fruits, cheese, cream or dry fruits and be innovative.
