Chicken Kofta Soup

Ingredients

300        gms        Chicken Kheema (Wash the meat before mincing, Do not wash after mincing the meat)
1            Pkt         Rice Pasta
2            nos.        Eggs
2            Nos        Large Onions Sliced
2            tblsp      Garlic Grated
1            Green Chilli Chopped
2            tblsp      Butter
1            cup        Cornflour
1            tbsp       Fresh Lime Juice
1            stlk        Fresh Celery Chopped
1            stlk        Green Onion Chopped
1            tsp         Sugar
Salt & White pepper powder to taste
Fresh Parsley or Coriander Finely Chopped
Choice of Stock as per need

Method

Take minced meat in a large mixing bowl. Add eggs, seasoning, cornflour and mix well. Make small koftas of this minced meat and keep it aside.
Take a large pot and heat butter in it. Add grated garlic saute for a minute, add onion and saute until soft and translucent (shiny). Add green chilli and fill 3/4 amount of the pot with clear chicken stock. Add celery and bring
to boil.
Once the stock starts boiling add pasta and let it cook until its 70% done. Once done, medium the heat and add koftas one by one slowly, carefully stirring, giving way to other koftas.
Once all the koftas are added, cover the pot with lid and let it cook for five minutes. Open the lid and stir once to see the koftas are done. Once done, simmer the heat, seasoning it if needed and serve the soup in a large soup plate, with koftas, pasta and...

GarNICHE with fresh parsley, green onions, lemon juice. Serve.
