Aab Gosh

Ingredients:

400 gms Lamb Ribs
100 gms Lamb Tail
2 Large Onion
2 Nos. Red Bell Pepper
1 Nos. Hot Pepper
½ cup Chickpeas
4 sml Tomatoes
1 stk Celery
1 tblsp Crushed Garlic
1 tsp Jeera Powder
½ tsp Red Pepper Powder
4 tblsp Oil
Seasoning
For Garnishing
Kothmir Finely Chopped
Phudina Finely Chopped

Aab means water. Aab Gosh is an Persian name of Mutton Shorba.


Method

Soak Chickpeas overnight. Next day change to freshwater. Chop peppers into long chunks. Cut tomatoes into 4 pieces, deseed it and keep aside. Slice rings of onions and keep them aside.

Take soup pot add oil, heat it, and add garlic and onions in it. Saute for a minute and add lamb chops and tail into it. Add jeera powder, red pepper powder, chopped celery some seasoning, and stir for 3 to 4 minutes. Add chickpeas and stir once more, then add enough water to cover almost 1½ times more than the ingredients.

Simmer this soup for about 40 minutes. Once the meat is cooked about 80% add chopped tomatoes, peppers, herbs and let it cook for another 10 minutes or until oil floats.

GarNICHE with herbs and serve with rice or bread.
