Chicken Wings in Roasted Tomatoes Sauce

Ingredients

400    gms Chicken Wings (skinless)

Ingredients Marination

½    cup    Kashmiri Chilli Paste
1½    cup    Minced Garlic
1½    cup    Onions Chopped
1     cup    Chopped Celery
Oil as per need
Salt to taste

Charcoal for Smoking

Ingredients for Red Tomato Sauce

500    gms    Large Red Tomatoes
1½    cup    Mix Bell peppers (R/Y/G)
2    tblsp    Oil
½    tsp    Jeera Powder
2    tblsp    Brown Sugar
3    tblsp    Tomato Sauce
1    tblsp    Tobasco Sauce
Salt & Pepper to taste
Stock as per need
Green Onions Chopped

Method

In a large stock pot heat 2 tblsp oil and add onions, kashmiri chilli paste, garlic and saute until all the flavor blend in thoroughly. Once full with flavor add chicken wings and roast it stirring occasionally. Add celery and stir cook it for 6- 7 minutes. Add salt as per taste and remove from heat.

Burn a charcoal and smoke the wings (Coalsa no Dhungar). Keep it aside covered.

Take wire mesh or skewers and roast tomatoes on a high flames until the skin is dark. Be sure you do not break the tomatoes or burn it too dark. Remove the skin and discard.

Take another sauce pot and heat oil and saute chopped bell peppers (3 color Capsicums) until flavored. Add chopped roasted tomatoes, jeera powder, brown sugar,  both the sauces and stir to mix thoroughly. Add 1 cup chicken stock and bring to boil.

Once the sauce has heated up, add in smoked chicken wings with the cooked marination. Mix thoroughly once or twice and...

GarNICHE with Green Onions, Serve this with sticky rice or pasta and Lachcha paratha too.
Chicken wings are most delicate and soft fleshy part of chicken.

Note: To make Kashmiri Chilli Paste: De-seed Kashmiri Dry chillies in warm water for two hours, then blend it in the grinder into smooth paste.
