Chicken Handi Restaurant Style
Ingredients
Pre-Cooking Chicken
1 Kg Big Chicken Pieces
1 tsp Chilli Powder (Spicy)
3 tsp Haldi
2 tblsp G/G/GC Paste
Salt to Taste
For the Gravy
250 gms Onion Paste
250 gms Tomaotes Paste
¼ cup Kaju Paste
¼ cup Magaz Paste
¼ cup White Til Paste
3 tsp Red Chilli Powder (Mild)
2 tsp Chilli Powder (Spicy)
1 tsp Haldi
2 tsp Jeera Powder
2 tsp Dhania Powder
1 tsp Garam Masala Powder
2 cups Oil
Salt to Taste
Fresh HD/PHD chopped
Preparing Chicken Handi
4 Pre-Cooked Big Chicken Pieces
1 Small Capsicum Sliced
1 tsp Jeera
1 Small Piece Cinnamon
4 Cloves, 4 Cardamon
1 Tej Patta (Bay Leaf)
1 tblsp Butter
Pre-Cooked Chicken Stock
Salt to Taste
Method
For Pre-Cooking
In a large stock pot add with chicken all the Pre-Cooking ingredients and enough of water and keep on medium high heat for cooking. If you like to pressure cook it, its fine.
Once cooked keep the chicken in the stock until preparing the Handi.
Preparing Gravy
Take a large sauce pan and heat oil. Once the oil smokes, add onion paste and sauté until the paste bubbles and cooks. Add tomato paste and stir until the water of tomato is dried. Add all the dry masalas stirring well. Add K/M/T paste and sauté the mixture continuously for about 10 to 15 minutes or until the gravy shines with oil. Keep adding little water if the gravy becomes too dry.
While sauting remember the bubbles of the gravy pops and you may get burn. So carefully saute the gravy covering with a lid on the pot. Once the gravy is done keep it aside.
Preparing Chicken Handi
Take a brass handi or a non stick sauce pot. Heat butter. Once the butter melts, add whole garam masala and saute until crackles. Add capsicum and fry for a minute. Add chicken pieces, along with prepared gravy (as much as you require) and mix well. Add pre-cooked chicken stock as per your requirement and cook it on high heat until bubbles. Simmer the heat and adjust salt as per taste. Once its done...
GarNICHE with fresh Hara Dhania, Lemon Slice and enjoy with naan or paratha or even Jeera Rice.
This is a Restaurant Style Chicken handi. The basic recipe remains same, you can substitute Mutton or Veg.
